Roasted Tomatoes with cheese
Ingredients:
-A dozen 3 inch tomatoes,cut in half
-1 cup shredded mozzarella cheese
-Olive oil,salt,pepper
Placed sliced tomatoes on oiled cookie sheet
Salt,pepper and toss around to mix
Bake at 350 degrees about 25 minutes
Last 5 minutes,add cheese to top

Baked Butternut Squash
Ingredients:
(for 4 people)
-2 butternut squash,cut in half lengthwise,seeded
-1/2 cup maple syrup
-4 tablespoons margarine or butter
Place cut squash,skin side up,in 2- 9 by 13" baking pans,
add alittle water to cover bottom
Cook for about an hour at 350,till tender
When done,turn over and pour maple syrup and 1 tblsp.
margarine each into hollowed out portion
of squash,heat for about 3 more minutes

Baked Root Vegetables
(for 4 people)
-1/2 bag smalled peeled carrots
-1 large size yam,peeled,cut into chunks
-3 parsnips,peeled,cut into chunks
-1 butternut squash,peeled,cut into chunks
(sometimes you can find it already cut up)
-1 tablespoon parsley
-Drizzle of olive oil
-Salt,pepper
Place all veggies in large bowl.
Salt,pepper and place on cooking sheet.
Drizzle with olive oil and toss.
Bake at 400 degrees for about half hour
or till veggies are tender,turning once
When veggies are done,place in bowl
Sprinkle with parsley

Oven fried potatoes
(serves 4)
Easy to make,always a hit!!
5 medium potatoes,scrubbed
1/4 cup grated parmesan cheese
1/2 teaspoon salt & pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon olive oil
Preheat oven to 425 degrees
Cube potatos,put into large bowl.
Pour all ingredients over potatoes,
Mix well
Spray a baking sheet with Pam,
add potatoes,cook for 30 minutes
or until tender

Yellow Squash or Zucchini
Some of you may not know how
to prepare these delicious squashes.
It's easy!Just slice,put in pan and JUST
cover with water,add abit of salt,and let
it boil for about 10 minutes,add some butter
and VIOLA!there you go!


Old fashioned mashed (aka "smashed") potatoes
8 large potatoes,peeled and cubed
1/2 cup milk or half and half
2 tblspoons butter or margarine
1/2 teaspoon salt
1/4 teaspoon pepper
Boil spuds till fork tender,drain.
With electric mixer,starting on low,
slowly mash spuds
Add milk,butter,salt,pepper
Continue to mix,up to medium,till big
clumps are gone.
Season to taste if you need more salt
